1. Authentic Amla Murabba

Ingredients 

  • Amla- 1 cup chopped into halves
  • Saffron strands- 3-4
  • Elaichi powder- 1/8 tsp
  • Sugar- ½ cup 

Preparation Method

1. Wash the amla properly and cut them into halves by removing the seeds. 

2. Add water and the chopped amla into a deep bowl and let them boil for 10 minutes. 

3. Drain the water and keep the amla aside.

4. Boil the sugar in 1.5 cup water and stir until the sugar completely melts into the water. 

5. Add the amla to the water and cook for 30 minutes on slow flames until it turns soft.

6. Remove the vessel and let it sit for 48 hours so the amla will soak the syrup properly.

7. After 48 hours, drain all the syrup in another bowl, add saffron and elaichi powder, and boil until the syrup reduces to half.

8. Now add the amla into it, let it cook for 3 minutes more, switch off the gas, and let the murabba cool properly; then store it in a glass jar for up to 1 year on the shelf away from sunlight and air.

2. Spicy And Tangy Amla Murabba

Ingredients

  • Water- 300ml
  • Amla- 10-12
  • Sugar- 250gm
  • Black salt- 1 tsp
  • Black pepper- 1 tsp
  • Cardamom powder- 1 tsp
  • Saffron- 5-6 strands

Preparation Method

1. Wash the amla and put them into a pan. Add the water and let them cook for about 15-20 minutes to make them soft.

2. Drain the water, let the amla dry, break them into pieces, and remove the seed.

3. For sugar syrup, combine sugar and water in a bowl and stir continuously to dissolve and till it comes down to 1 string when pulled, by boiling it on medium flame.

4. Add the amla to the syrup, mix well, and let it cook for 20-25 minutes, so the syrup becomes thick.

5. When the syrup gets thick, add cardamom, black pepper, and black salt and mix well (you can also add crushed black pepper powder for the extra spice).

6. Remove from the gas, then let it sit for the night. 

7. Store this murabba in a glass container for 1 year at room temperature.

  • To control high cholesterol, you can simply have dry amla powder with honey after a meal once a day, which will help to keep your high cholesterol level in check.
