Ingredients

  • Purple cauliflower- 1 chopped
  • Coriander- 1/2 cup 
  • Flat parsley leaf - 1/2 cup 
  • Garlic- 1 clove
  • Lemon- 1/2 
  • Red onion- 1 chopped
  • Dijon mustard- 3 tsp
  • Honey- 1 tsp 
  • Tahini- 4 tbsp 
  • Pepper- 1 nos.
  • Salt- 1 tsp
  • Olive oil- 2 tbsp 
  • Almond flakes- 1/2 cup 
  • Water- 1/4 cup 

Preparation Method

Preparation Of Purple Cauliflower

1. Cut the purple cauliflower into florets. Take a medium-sized mixing bowl and cover the cauliflower with 1 tbsp of olive oil and a little salt.

2. Line a baking tray with baking paper spread on it. After placing the purple cauliflower on the baking tray, place it in the oven at 200 C or 400 F for 8 minutes.

3. Now, remove from the oven and turn the florets to get an even roasting throughout. Put it again in the oven for a further 8 minutes.

4. When it is done, take it out of the oven and put it aside for 10 minutes to cool it down.

Preparation Of Other Ingredients

1. Whilst the purple cauliflower is in the oven, toast almond flakes in a small fry pan on medium heat. Toast for 2-3 minutes or until golden brown.

2. Watch it for the whole time, as the flakes are thin and can go from white to burnt before you know it.

3. Cut them into thin slices for the onion. Add 1 tbsp of olive oil into a frying pan and caramelise on medium to high heat for about 6 minutes or until golden brown.

Preparation Of Tahini Dressing

1. Crush the garlic clove with the back of a knife to release its flavours. We are only infusing the dressing and not actually consuming the garlic.

2. In a small mixing bowl, mix tahini, Dijon mustard, honey, crushed garlic, the juice of ½ a lemon and water until well combined.

How To Assemble Purple Cauliflower Salad?

1. Discard the crushed garlic clove. Smear the bottom of the flat serving platter or plate with the lemon mustard tahini dressing.

2. Then put the caramelised onions and ½ the toasted almond flakes on top. Spread it out evenly.

3. Mix the parsley and coriander with the roasted purple cauliflower florets. Then place them evenly on top of the onions.

Sprinkle the rest of the almond flakes as a garnish. Season with salt and pepper.
