Ingredients
Cooked quinoa - 1 cup
Black beans (drained and rinsed) - 1 can (15 oz)
Onion (finely chopped) - 1/2 cup
Bell pepper (chopped)- 1/2 cup
Garlic (minced) - 2 cloves
Breadcrumbs (whole wheat or gluten-free) - 1/2 cup
Fresh cilantro or parsley (chopped) - 1/4 cup
Cumin - 1 teaspoon
Chili powder - 1 teaspoon
Paprika - 1/2 teaspoon
Salt - to taste
Pepper - to taste
Olive oil (for cooking) - 1 tablespoon
Whole grain burger buns
Toppings of your choice: lettuce, tomato, avocado, onion slices, etc.
Instructions:
Set the oven to preheat at 375°F (190°C).
In a large mixing bowl, mash half of the black beans with the help of a fork or potato masher. Add the remaining whole beans to the bowl.
Add cooked quinoa, chopped onion, bell pepper, minced garlic, breadcrumbs, cilantro or parsley, ground cumin, chilli powder, paprika, salt to taste, and some pepper in the bowl with the beans. Ensure thorough mixing until all ingredients are evenly combined.
Form the mixture into burger patties using your hands. If the mixture is too wet to form into patties, you can add a bit more breadcrumbs to help bind it together.
Start heating the olive oil next over medium heat in a skillet. Once the oil is hot, add the burger patties to the skillet (you may need to cook them in batches, depending on the skillet size). Cook each side for about 3-4 minutes or until they develop a golden-brown crust.
On a baking sheet ready with parchment paper, transfer the partially cooked patties then place them in the oven, you preheated earlier. Bake for about 10-15 minutes until the patties are completely cooked through and firm.
Once done, assemble your burgers by placing the patties on whole grain burger buns and add your desired toppings like lettuce, tomato, avocado, onion slices, or any condiments of your choice.
Serve the quinoa and black bean burgers immediately and enjoy!

5. Cucumber Noodle And Sesame Salad
Cucumber and Sesame Noodle Salad is quick, easy, refreshing and utterly delicious. Take a look at this healthy and tasty recipe.
3-4 medium-sized cucumbers
2 tablespoons rice vinegar
1 tablespoon soy sauce or tamari (for gluten-free option)
1 tablespoon sesame oil
1 teaspoon honey syrup (optional)
1 clove garlic, minced
1 tablespoon sesame seeds (black or white), toasted
Red pepper flakes (optional)
Salt and pepper to taste
Chopped cilantro for garnish (optional)
Instructions:
Wash the cucumbers thoroughly. Using a vegetable peeler or a spiraliser, create cucumber noodles by running the peeler or spiraliser along the length of the cucumber. Once you've created noodles from all the cucumbers, place them in a large mixing bowl.
Next, start whisking rice vinegar, soy sauce or tamari with sesame oil, minced garlic and honey or some maple syrup (if using), in a small bowl. And do not forget to add a pinch of red pepper flakes. Taste the dressing and adjust the flavours according to your preference. You can add a bit more vinegar for tanginess or honey for sweetness.
Pour the dressing over the cucumber noodles in the mixing bowl. Toss the noodles to ensure they are evenly coated with the dressing. Season with salt and pepper to taste.
Toast the sesame seeds for 2-3 minutes in a dry skillet over medium heat or until they turn golden brown and become fragrant. Once toasted, remove them from the skillet and set aside.
Sprinkle the toasted sesame seeds over the cucumber noodles and toss gently to distribute them evenly throughout the salad.
Cover the bowl and refrigerate the salad for about 15-20 minutes to allow the flavours to blend together. This step is optional but recommended for a more infused taste.
Before serving, garnish the salad with chopped cilantro for an added burst of flavour and freshness.
There you have Cucumber Noodles and Sesame Salad ready as a refreshing and healthy side dish to be served.
