1. Tricolour Paneer Tikka

Here is a patriotic version of the classic Paneer Tikka, this dish is as flavorful as it is colourful.

Ingredients

Curry Leaves

Cashew Nut Paste

Mustard Oil

Mustard Seeds

For Marination 

Garlic Paste

Extra Virgin Olive Oil

Red Chilli Powder

5 gm

Yellow Chili Powder

Cheese Cubes

10 gm

Spice Cardamom (ground)

Fennel Seeds Powder

Mint

20 gm

Green Chilli

Ginger Paste

Lemon Juice

20 ml

Hung Curd

Garam Masala Powder

Preparation Method

  • Firstly, cut the paneer into 6 cubes and take a large mixing bowl.

  • Now add salt, lemon juice, olive oil, ginger, and garlic paste into it. 

  • Stir the mixture well to make a smooth paste. 

  • Now, add the paneer pieces into the newly formed marinade to begin with marination.


Prepare The Saffron-Coloured Marinade For Re-Marination

  • For making tricolour paneer tikkas, you have to divide paneer into categories.

  • For the saffron tikkas, add around 30 grams of curd, red chilli powder, garam masala and yellow chilli powder in a mixing bowl. 

  • Now, saute mustard seeds along with dry red chillies and curry leaves in the mustard oil and add it to the marinade. 

  • Stir it well and keep it aside.


Ready The White And Green-Coloured Marinade

  • To make white colour tikkas, take a separate bowl and add 10 grams of curd, cashew nut paste, fresh cream, cardamom powder, white pepper, and fennel powder. colour

  • Mix all these ingredients well and keep them aside. To make a paste, grind green chilli, mint, kasoori methi, and coriander leaves for green tikkas. 

  • Combine this paste with 20 grams of curd, mustard oil, lemon juice, and chat masala powder to make the marinade. Keep the marinade aside.


Divide Paneer Cubes And Re-Marinate Them Into Tricolour

  • Now, distribute the paneer pieces into 3 equal parts.

  • Marinate all the paneer pieces to be dipped in each coloured marinade.

  • Allow the paneer to marinate for around 30 minutes to 1 hour.


Roast The Paneer Pieces In A Tandoor And Enjoy

  • Lastly, put the paneer pieces in a tandoor and arrange them in tricolour.

  • Allow the paneer pieces to get roasted well on a tandoor.

  • Transfer them onto a plate with mint chutney and enjoy!

2. Palak Paneer Rolls

Make these spring roll-style palak paneer rolls with cooked spinach and carrots filling. This veggie filling wrapped in whole wheat rotis can also be a good breakfast. Along with healthy eating, you may also take Republic Day detox plans

Preparation Method

  • Firstly, puree the spinach with green chilli and keep it aside. 

  • In a bowl, add wheat flour, spinach puree, cumin powder, and salt and knead it all together to make a smooth dough, and keep adding water if required.

  • Now, divide the dough into 4 portions.

  • Heat a skillet over medium flame to make thin palak parathas. 

  • Cook the paratha well on both sides until it turns golden. 

  • To make the Paneer Burji, mix all the ingredients listed above to make the paneer bhurji filling.

  • To make the wrap, add a tablespoon of the sauce to each paratha and spread well.

  • Spoon the paneer Burji mixture into the paratha. Roll to form a wrap and serve.

  • Serve the Palak Paneer Bhurji Roll as breakfast or evening snack.
